Banana Nut Bread


I think Bobbi posted a recipe for this awhile back, but here's mine.

3 very ripe bananas
2 eggs
1 tsp baking soda
3 TB melted butter
1 cup sugar
2 cups flour
1 tsp baking powder
1 dash salt
1/2 cup chopped nuts
3 TB buttermilk (or if you're like me, you never have buttermilk ~ add 1/2 tsp vinegar to milk)

Mash bananas and add well beaten eggs.
Add soda to buttermilk and add. Beat.
Add butter and sugar. Sift flour and baking powder twice.
Roll nuts in flour then add. Pour into loaf pans and top with cinnamon.

Bake a 350 for 45 minutes.

Baked Spagetti

Brown and drain 1 1/2 pounds hamburger. Add 3 small cans tomato sauce and 1 package Lowery's Spaghetti and seasoning mix. Set aside.
Add in layers in deep casserole dish:
Cooked, drained spaghetti noodles, 8 slices of American cheese (I use Kraft processed cheese, or just use grated cheese if you don't have the slices), sprinkle with grated cheddar cheese, cover with meat sauce. Sprinkle with parmesan cheese.
Repeat.
Pour 1 can of diced tomatoes and juice over top and sprinkle with parmesan cheese. Bake uncovered at 350 for 45 minutes.
